– Cheese: I use a combination of shredded mozzarella cheese and Feta cheese.
– Herbs: I use finely chopped fresh parsley and fresh mint.

– Egg roll wrappers: For siagara borek, I use egg roll wrappers. However, you can use phyllo sheets or traditional Turkish pastry (yufka dough).
– Oil: You can use any type of vegetable oil you prefer to fry these Turkish Feta rolls.

INSTRUCTIONS:
– In a large bowl, combine shredded mozzarella cheese, feta cheese, parsley, and mint. Mix with a spoon to combine.
– Fill a pot about ⅔ full with neutral oil. Heat on medium-high heat until temperature reaches 325 F.
INSTRUCTIONS:
– Carefully place egg rolls into the oil, and fry them for about 5 minutes until golden brown. Place them on a plate lined with a paper towel to absorb the excess oil.
– Cool for 5 minutes and serve.
