Ingredients
  

  • 1 medium red onion
  • 1 cup white distilled vinegar
  • 1 cup water
  • ½ teaspoon salt
  • ½ teaspoon peppercorn Optional

Instructions
 

  • Heat the vinegar, water, and salt in a medium saucepan over medium heat. Stir until the salt dissolves.
  • Thinly slice the red onions.
  • Place sliced onions and peppercorns in a 16-ounce jar.
  • Pour the vinegar mixture over the onions and screw on the lid.
  • Press down the onion to ensure they are all submerged under the vinegar.
  • Set aside to cool down at room temperature, then store in the fridge.
  • Pickled onions will be ready to eat once they're bright pink.
  • Store them in the fridge for up to 2 weeks.
