Ingredients
  

  • 15 oz. Canned Pumpkin Puree don't use pumpkin pie mix
  • 2 eggs
  • 1 box spice cake mix I used 15.25 oz of Betty Crocker™ Delights Super Moist™ Spice Cake Mix
  • ¼ teaspoon Pumpkin pie spice
  • ¼ teaspoon cinnamon

Cream Cheese Filling

  • 8 oz. cream cheese at room temperature
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 410 degrees F and line muffin tins with liners
  • In a large bowl, whisk pumpkin, egg, pumpkin pie spice, and cinnamon until fully combined. Add cake mix and fold until everything is combined. Fill muffin liners using a cookie scope.
  • To make the cream cheese filling: combine cream cheese, sugar, and vanilla until all combined and smooth.
  • Add a tablespoon of the cream cheese mixture to the center of each muffin.
  • Bake for 10 minutes at 410 degrees F, lower the oven temperature to 350 degrees F and bake for 20 minutes or until a toothpick inserted comes out clean.
  • Place muffins on a wire rack to cool completely.
