1boxspice cake mixI used 15.25 oz of Betty Crocker™ Delights Super Moist™ Spice Cake Mix
¼teaspoonPumpkin pie spice
¼teaspooncinnamon
Cream Cheese Filling
8oz.cream cheeseat room temperature
½cupgranulated sugar
1teaspoonvanilla extract
Instructions
Preheat the oven to 410 degrees F and line muffin tins with liners
In a large bowl, whisk pumpkin, egg, pumpkin pie spice, and cinnamon until fully combined. Add cake mix and fold until everything is combined. Fill muffin liners using a cookie scope.
To make the cream cheese filling: combine cream cheese, sugar, and vanilla until all combined and smooth.
Add a tablespoon of the cream cheese mixture to the center of each muffin.
Bake for 10 minutes at 410 degrees F, lower the oven temperature to 350 degrees F and bake for 20 minutes or until a toothpick inserted comes out clean.
Place muffins on a wire rack to cool completely.
