In a bowl, add water, yeast, and sugar. Mix them together and set your bowl a side until the yeast activates.
Once yeast has activated, add flour, salt, egg white, and the 2 tablespoons of olive oil.
Knead the dough for 5-10 minutes on a floured surface until a ball is formed. it's normal for the dough to be a little sticky. Oil your hands before working with it.
Oil a bowl and place the dough ball in there, then cover it with plastic wrap. Keep the dough covered in a warm place for an hour until it has doubled in size.
Place the dough on a clean floured surface and knead it with your hands or with a rolling pin until a round or oval shape is formed. Cover your baking dish with baking paper and place the shaped dough in it.
Mix 2 tablespoons. of water with 4 tbsps. of flour to form a paste. Dip your fingers or a fork in the paste and go around the edges of the bread to form a nice crust. Then, with the same method, shape the middle of the dough to a baklava or diamond pattern.
Cover the bread and let it rest for another hour. It will be rise up and be very puffy.
Combine the egg yolk with 1 tablespoon of yogurt and 1 tablespoon of olive oil. Use your finger very gently to brush the bread with the mixture.
Sprinkle the bread with toasted sesame seeds and black seeds.
Bake on pre-heated oven on 375F for 15-20 minutes.
