Ingredients
  

Mushroom Sauce

  • ¼ cup unsalted butter
  • 2 cup portobello Mushroom finely chopped
  • 3 cloves garlic minced
  • 10.5 ounce can condensed cream of mushroom soup
  • 1 cup water
  • 1 cup Parmesan cheese grated
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Chicken

  • 1 chicken breast Cut into 2-3 thin slices, or cut into thin strips.
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ cup oil for frying the chicken
  • 4 slices Monterey Jack cheese
  • ½ cup Parmesan cheese

For Garnish

  • 2 tablespoons fresh parsley finely chopped

Instructions
 

  • Melt butter in a large pan over medium heat. Saute mushroom and garlic for 2-3 minutes, and then add condensed cream of mushroom soup, water, and seasonings (garlic powder, onion powder, black pepper, and salt). Lastly, add parmesan cheese and cook for one more minute until the cheese melts.
  • Season chicken on both sides with the seasonings (salt, paprika, black pepper, and garlic powder). Add oil to a pan on medium heat and fry the chicken on both sides for 4-5 minutes.
  • Add one slice of cheese to each chicken and sprinkle with parmesan cheese. Broil on high until cheese is melted.
  • Serve the chicken with the mushroom sauce and sprinkle with parsley.
