Ingredients

  • 13 oz. date paste soak 13 oz. pitted dates in hot water for 10 minutes.
  • ¼ cup unsweetened coconut flakes
  • 1 tablespoon coconut oil
  • ½ teaspoon cinnamon
  • 1 cup walnuts
  • ½ teaspoon orange blossom water optional

Chocolate

  • ½ cup milk chocolate or dark chocolate
  • ½ cup white chocolate

Instructions

Prepare and Form the Balls

  • Add all date ball ingredients to the bowl of a food processor and pulse them for a couple of minutes until everything is completely combined.
  • Using a scoop or a tablespoon, scoop out the mixture on a plate. Now, roll them into balls between the palms of your hands.
  • Refrigerate for an hour or freeze for 30 minutes.

Melt the Chocolate and Coat the Date Balls

  • Dip one date ball at a time, submerge it into melted chocolate, and carefully lift it out using a fork. Place them lined on a sheet pan.
  • Garnish: top the truffles with coconut flakes, and chopped walnuts, or drizzle more chocolate if desired.
  • Refrigerate the date truffles for at least an hour to allow the chocolate coating to set. Once the chocolate is set, store them in an air-tight container lined with parchment paper, for up to 3 weeks.
