Ingredients
  

  • 2 large russet potatoes
  • 4 oz. cream cheese
  • 4 tbsp. butter
  • 1 tsp. salt
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • 1 tsp. black pepper
  • 1 block Boursin cheese
  • ½ cup milk
  • ½ cup Mexican blend cheese

Instructions
 

  • Start by peeling the potatoes, wash them, and cut them into small pieces. Add them to a large pot and fill the pot with hot water, covering them by a couple of inches. Bring the pot to a boil on medium heat until they are fork-tender, 15 minutes. Once they are ready, strain the potatoes and return them to the pot.
  • Mash potatoes with a fork or potato masher.
  • Add cream cheese, butter, salt, black pepper, onion, garlic powder, Boursin cheese, and milk and mix them on medium heat until they are all combined.
  • Transfer mashed potatoes to a baking dish (I used an 8x8 baking dish) and top it with your favorite cheese.
  • Lastly, bake on a preheated oven (350degrees F - 177 degrees C) for 10 minutes and broil on high until golden on top.
  • Sprinkle fresh herbs on the top of dish before serving.
