Preheat the air fryer to 400 degrees F. Spray the air fryer basket with cooking spray.
Place potatoes on a cutting board and cut them in half; place one half of potato in between two butter knives or chopping sticks to prevent cutting potato all the way through. Slice the potatoes into ¼ inch thick slices.
Repeat the process for the remaining potatoes.
In a small bowl, cream together butter and all the spices (½ tsp. black pepper, 1 tsp. garlic powder, 1 tsp. onion powder, ½ tsp. paprika, 1 tsp. dry parsley, 1 tsp. Vegeta seasoning or salt, 1 tsp. oregano )
Cover the potatoes with the seasoning mixture; make sure to get some in between each slice.
Place Seasoned potatoes in the air fryer basket, air fry for 20 minutes at 400 degrees F.
You can place cheese slices between each cut of the potatoes and air fry for 1-2 minutes.
Serve with a dollop of sour cream and sprinkle with fresh parsley.
