Start by peeling the potatoes, wash them, and cut them into small pieces. Add them to a large pot and fill the pot with hot water, covering them by a couple of inches. Bring the pot to a boil on medium heat until they are fork-tender, 15 minutes. Once they’re ready, strain the potatoes and return them to the pot.
Next, mash potatoes with a fork, or potato masher, and then add cream cheese, butter, salt, black pepper, onion, and garlic powder, Boursin cheese, and milk and mix on medium heat until they are all combined.
Transfer mashed potatoes to a baking dish( I used an 8x8 baking dish ) and top it with your favorite cheese.
Lastly, bake on a preheated oven (350 degrees F - 177 degrees C) for 10 minutes and broil on high until golden on top.
