Tender stew meat pressure cooked and then added to fresh fava beans, garlic, and onions to create a delicious Fava Bean Stew traditionally served over rice with vermicelli.
Add ¼ cup of oil to the pressure cooker, add stew meat and sauté for 2-3 minutes. Add 2 cups of hot water. Cook on high pressure for 45 minutes. Once cooked, strain the meat from the meat stock.
Cooking Fava beans
In a saucepan, add 2 tablespoons of oil, tomato paste, pepper paste, sauté for 3 minutes on medium heat until you have a beautiful red vibrant color.
Add finely chopped onions, chopped fava beans, salt and Aleppo peppers. Sauté for 5 minutes, and then add stew meat and strained meat stock.
Cover and cook for 10 minutes until fava beans are soft and cooked.
Sauté finely chopped garlic on medium heat for 2-3 minutes; pour it over the stew before serving. Enjoy fava bean stew with vermicelli rice.
