Preheat oven to 350°F.
Line a baking tray with parchment paper and set aside.
In a large bowl, add two whole eggs, ⅓ cup of oil, 1 tablespoon oflemon juice, and lemon zest of a lemon altogether. Mix all the ingredients thoroughly with a hand whisk or a fork, until all the ingredients are well combined.
Sift your store-bought cake mix, then add sifted cake mix to the wet ingredients. Use a spatula to properly mix all the ingredients.
Next, add ¾ cup of white chocolate chips to the batter, and fold everything using a spatula again.
Using a cookie scoop or a spoon, scoop the dough onto the prepared baking tray. Add more white chocolate to the scooped cookies.
Bake for 13-15 minutes, or until the cookies are set.
After you take the tray out of the oven, let it cool down for 10 minutes.
Transfer your freshly-baked cookies to a wire rack.
Once the cookies cool down completely, keep them in an airtight container.
