Ingredients

  • 8 pieces chicken thighs and/ or legs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons seasoning salt
  • 2 tablespoons olive oil
  • ½ cup buttermilk ranch dressing
  • 2 medium size potatoes peeled and cut into medium size cubes
  • black pepper
  • Cajun seasoning or lemon pepper seasoning

Instructions

Prepare your chicken:

  • Preheat your oven to 450 °F
  • In a large bowl, season your cleaned chicken with garlic powder, onion powder, seasoning salt, olive oil, and ranch dressing.
  • Massage the seasoning into the meat until all is combined. (You can let the chicken marinate for a couple of hours if you have time).

Bake your Chicken:

  • Place cubed potatoes at the bottom of your baking dish or cast iron skillet, followed by the chicken thighs.
  • Sprinkle some black pepper, Cajun seasoning/ or lemon pepper on the chicken skin.
  • Place the pan uncovered into the preheated 450°F oven for 60 minutes. Broil on high heat until golden.
  • Allow the chicken to rest for about 10 minutes before eating. Garnish with fresh parsley and serve it with any side dish of your choice.
