    Ingredients for the Chicken

    • chicken thighs or legs
    • salt
    • black pepper
    • smoked paprika
    • Old Bay seasonings

    • rice
    • onion
    • garlic

    •  7 spices
    • butter
    • Vegeta seasoning
    • toasted almonds
    • parsley

    Directions for One Pot Chicken Thighs and Rice

    Mix all the spices in a clean bowl and add the chicken. Cover the chicken with herbs and rub. Make sure it's all coated and marinate them for a couple of hours if you have time. If you don't, then let it sit for at least 20 minutes.

    Start frying the chicken by adding oil to a large pot. Let each of the chicken sides fry for 3-4 minutes until it turns golden and then keep it aside.

    In the same pot, add onion, garlic, and parsley. Sauté it in the same oil where you fried the chicken.

    Now add butter, Vegeta seasoning, Maggi cube, 7 spices, and black pepper and mix them. Add the 2 cups of rice and make sure everything is combined well.

    Put the fried chickens on top of the rice.

    Add 4 cups of hot water and cook on high heat uncovered.

    Once all the water has been absorbed, cover the pot with a lid. Turn the heat down to low and let it sit for more than 30 minutes.

    Ingredients
      

    Ingredients for the Chicken:

    • 3-4 chicken thighs or legs You can use four legs or three large thighs depending on the space of the pot
    • 1 teaspoon salt
    • 1 teaspoon black pepper
    • 1 teaspoon smoked paprika
    • 1 teaspoon old bay seasonings
    • 1 teaspoon creole seasoning
    • ½ cup oil

    Ingredients for the Rice:

    • 2 cups long grain rice rinsed
    • 1 onion finely chopped chopped
    • 3 cloves of garlic chopped
    • 1 Maggi cube
    • 1 teaspoon black pepper
    • 1 teaspoon 7 spices
    • 2 tablespoons butter
    • 1 teaspoon Vegeta seasoning

    For Garnish

    • ¼ cup almonds toasted
    • 2 tablespoons parsley fresh

    Instructions
     

    Directions (chicken):

    • Get a clean and moisture-free bowl for mixing the spices. If you want to use your hands for mixing the spices, you should wear gloves, otherwise, your skin might get burned. However, using a spatula will be better.
    • Make sure that the meat is defrosted. If not, then get a bowl of cold water and submerge the meat in it. It will take a maximum of 30 minutes or you can use lukewarm water too.
    • Now add all the spices you need for the chicken in the clean bowl and mix them evenly.

    • You have to ensure that all the spices are coated with the meat equally.
    • Take a large pot depending on how much rice you want to cook.
    • Add a sufficient amount of oil to that pot.
    • Put the meat skin down in the pot and fry for 3-4 minutes on each side.
    • When you see the meat turning into a brownish color, which indicates that frying is done, take out the meat and set it aside.

    Directions (Rice):

    • Using the same pot, add the finely chopped onions, garlic, and parsley. Now sauté for a couple of minutes until they are well combined.
    • Gradually add butter, Vegeta seasoning, Maggi cube, 7 spices, and black pepper. Make sure to mix them well.
    • Now add rice to it and sauté. Try to combine everything evenly.
    • After mixing everything, add the cooked chicken on top of the rice.
    • Boil 4 cups of water previously on another stove and after that, pour it on the rice pot.
    • Now cook the rice and meat on high heat but do not cover them.
    • Once the water has been absorbed, cover the pot with the lid and turn the heat down to a low.
    • Cook for 30 minutes.
    • Garnish with toasted almonds and parsley.
