Ingredients
  

  • ½ small green cabbage finely shredded
  • 1 large carrots grated
  • 1 Granny Smith apple cored and thinly sliced
  • ½ cup chopped nuts (such as walnuts or almonds)
  • ¼ cup dried cranberries
  • ½ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • ½ teaspoon Dijon mustard
  • salt and pepper to taste

Instructions
 

  • In a large mixing bowl, combine the shredded cabbage, grated carrot, sliced apple, cranberries, and chopped nuts. Toss them together gently to mix well.
  • In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined. Taste the dressing and adjust the seasoning according to your preference.
  • Pour the dressing over the cabbage mixture. Use a spatula or large spoon to toss and coat the vegetables and nuts evenly with the dressing. Make sure everything is well coated.
  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together and the cabbage to slightly soften.
  • Before serving, give the coleslaw a good toss to redistribute the dressing. Taste and adjust the seasoning if needed.
  • Serve the coleslaw chilled as a side dish or as a topping for sandwiches or burgers. Enjoy!
