Ingredients
  

  • 15.2 ounces Whole Kernel Sweet Corn  drained and rinsed
  • 10 ounces sliced green olives drained and rinsed
  • 15 ounces canned fava beans drained and rinsed
  • fried tortilla chips

Salad Dressing:

  • ½ cup lemon juice
  • 1 tablespoon olive oil
  • ¼ cup white distilled vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • In a large bowl, combine fava beans, corn, and sliced olives. Mix the ingredients thoroughly to ensure they are well combined.
  • To make the dressing, combine lemon juice, olive oil, vinegar, black pepper, and salt in a small bowl. Mix the ingredients thoroughly until well combined.
  • Pour the dressing over the salad and mix well.
  • Cover the bowl and place it in the refrigerator. Allow it to refrigerate for approximately 30 minutes. This will allow the flavors to blend together and enhance the overall taste.
  • Before serving, top the salad with fried tortilla chips. The tortilla chips will add a delightful crunch and a hint of savory flavor to the dish. Enjoy!
