Create a taste of the Mediterranean with this Hearty Fava Bean Stew. Tender stew meat is pressure cooked and then added to fresh fava beans, garlic, and onions and served over a bed of vermicelli rice to create one of the most luscious dishes you’ll ever taste.
This Fava Bean Stew Will Surpass Your Expectations
As anyone with kids can agree, pressured cooked stew meat is a real lifesaver. I often make a batch of stew meat and store it in the fridge to use throughout the week. Don’t disregard the meat stock; you can always add to your stew instead of water; it gives it an amazingly delicious flavor. You can also add meat stock to rice or rice pilafs.
I usually serve fava bean stew with vermicelli rice, which is rice with toasted vermicelli noodles. Feel free to serve it with any rice of your choice, and it will also taste great with jasmine rice.

What Are Fava Beans?
Fava beans, also known are broad beans, are ancient legumes. They have been a part of Middle Eastern cuisine and the Mediterranean diet. They are an excellent source of protein, iron, and fiber. Their creamy and buttery texture and delicious nutty flavor makes them special.
You can boil fava beans with salt; they make a fantastic healthy snack. We also add fresh or frozen fava beans to the bottom of dolma pots.
What Ingredients Are in the Fava Bean Stew?
- Fresh Fava beans: Fresh fava beans are the start of the show. If you can’t find fresh fava beans, then use fresh green beans instead.
- Finely chopped onions: I use onions in almost all of my stews. It gives the stew a great flavor.
- Finely chopped Garlic: You will add sautéed garlic to add to the stew right before serving.
- Spices: I only use Aleppo pepper and salt in this stew. Feel free to add the spices you prefer.
- Tomato paste and pepper paste: The paste is to create an excellent red sauce for this stew.
- Stew meat/ beef cubes: It gives fava bean stew an excellent flavor. Omit stew meat if you are vegan.

I usually find fresh fava beans in middle eastern grocery stores. They have a short season; for that reason, it’s excellent to chop them and freeze them for later uses. Canned and dried fava beans can easily be found.
You can cook this dish in the pressure cooker; once stew meat is cooked, transfer it to another bowl. Add oil to the pressure cooker, add tomato paste, pepper paste, onions and sauté for a couple of minutes until you have a beautiful red and vibrant sauce. Add your freshly cut fava beans, add beef stock, stew meat, and pressure cook on high for 10 minutes. Lastly, sauté finely chopped garlic and add it to your stew before serving.
Usually, large fava beans have a thick skin. So, if you’re using large beans, you may want to peel the skin first after boiling them before adding them to the stew.
You can make this fava bean stew ahead of time and freeze it. Once it has cooled to room temperature, place it in an airtight container. You can store it in the refrigerator for up to 4 days and reheat it on the stovetop or microwave.
Top Tips
- If you can’t find fresh fava beans, use fresh green beans instead.
- If you are vegan or wish not to add beef to your stew, just skip pressuring cooking stew meat; you can use water or vegetable stock instead of meat stock.
- Use a heavy-bottomed skillet or pan to make the stew. Using a heavy bottomed pan will distribute heat evenly and will prevent hot spots from forming, which can burn the bottom of your stew.
- Be careful not to overcook the stew. The fava beans can become mushy if you cook them too long.

Directions
To Cook the Meat:
- Add ¼ cup of oil to the pressure cooker, add stew meat and sauté for 2-3 minutes.
- Add 2 cups of hot water. Cook on high pressure for 45 minutes.
- Once cooked, strain the meat from the meat stock.
To Make the Stew:
- In a saucepan, add 2 tablespoons of oil, tomato paste, pepper paste, and sauté for 3 minutes on medium heat until you have a beautiful red vibrant color.
- Add finely chopped onions, chopped fava beans, salt, and Aleppo peppers.
- Sauté for 5 minutes, and then add stew meat and strained meat stock.
- Cover and cook for 10 minutes until fava beans are soft and cooked.
- Sauté finely chopped garlic on medium heat for 2-3 minutes; pour it over the stew before serving.
- Enjoy fava bean stew with vermicelli rice.
