Ingredients

This Copycat Texas Roadhouse Portobello Mushroom Chicken recipe requires uncomplicated ingredients:

Mushroom Sauce

  • Butter: I use unsalted butter.
  • Portobello Mushrooms: Choose firm, sturdy portobello mushrooms that are free of dark spots.
  • Garlic: Garlic will add a kick of flavor to your mushroom sauce.
  • Condensed cream of mushroom soup: You will need the condensed cream of mushroom soup to make the mushroom sauce.
  • Water: to make the mushroom sauce
  • Parmesan cheese: I recommend using freshly grated Parmesan cheese. 
  • Seasonings: You will need garlic powder, onion powder, black pepper, and salt. You can also add a sprinkle of white pepper if you like.

Chicken

  • Chicken breasts:  You will need boneless chicken breasts cut into 2-3 thin slices, or cut into thin strips.
  • Seasonings: You will need some garlic powder, onion powder, paprika, and salt to season your chicken breasts.
  • Oil: Use any kind of vegetable oil for frying the chicken.
  • Monterey Jack cheese: You’ll need slices of Monterey cheese to top your chicken breasts with.
  • Parmesan cheese: A sprinkle of parmesan cheese will take your dish to a whole new level.

For Garnish

  • Parsley: Garnish your chicken breasts with finely chopped parsley.

Step By Step Instructions

First, melt butter in a large pan over medium heat. Saute the chopped portobello mushrooms and garlic for about 2-3 minutes, and then add the condensed cream of mushroom soup, water, and seasonings (garlic powder, onion powder, black pepper, and salt). Lastly, add parmesan cheese and cook for one more minute until the cheese melts.

Next, season the chicken on both sides with the seasonings (salt, paprika, black pepper, and garlic powder). Add oil to a pan on medium-high heat, and fry the chicken on both sides for 4-5 minutes until they are golden brown.

Now, add one slice of Monterey Jack cheese to each piece of chicken and sprinkle with parmesan cheese. Broil on high until the cheese is melted.
