I thought about making dessert last night for my family. Itโ€™s been a while since weโ€™ve had any. I had no doubt that it might make the list of favorite desserts in my family because of how the buttery the baked potatoes looked!

Itโ€™s true that sweet potatoes come in all different sizes, but their flesh is ALWAYS creamy and very ,very tender. This is what I love most about the Twice-Baked Sweet Potatoes with Pecans! I can snack on them and make them my main course. If you know me, youโ€™ll know that I love the idea of being able to create different things. Having endless possibilities makes me really HAPPY and gets me in the mood for some delicious cooking! I’m glad to know that the skin of my sweet potatoes can be used on its own to make a yummy snack, so the tough exterior won’t go to waste!

First, bake sweet potatoes until they are soft, and then you can scoop out their inside and mash them with other ingredients to create the creamy mixture. After you add the mixture to the remaining sweet potato skin, you should bake them again to perfection. 

  1. Preheat the oven to (400 degrees F – 200 degrees C). Check your sweet potatoes with a fork a few times to check if they’re tender then, place them on a baking dish. Bake until they are soft for about 50 minutes.
  2. Once cooked, open up the sweet potatoes lengthwise. Scoop out the flash of all sweet potatoes into a bowl. Leave some sweet potatoes and their skin intact.
  3. Add butter, cream cheese, cinnamon, pumpkin pie spice, nutmeg, brown sugar, crushed pecans, and sweet potato flesh to a bowl and mix them thoroughly.
  4. Scoop the mixture into the sweet potato skins. Top it with more pecans and bake for another 10 minutes.

The Perfect Family Dessert !

My kitchen smelled like heaven after I took out my sweet potatoes out of my oven! The heavenly and fresh smell of cinnamon was the tell-tale sign that this dish was definitely a success.
