For the Cheese, if you do not find Boursin Cheese, you can use shredded cheese: Fontina, cheddar, Gruyere, or fresh Parmigiano-Reggiano.     Butter: Use high-quality butter: Kerry gold butter works wonder in this recipe.

    Cheese: Use your favorite cheese and broil until golden on top. In this recipe, I used Mexican blend cheese.

    Use room temperature ingredients: Make sure that you are adding butter and cream cheese at room temperature. It will help the mixing process easy.

    Boursin Cheese: Add your favorite flavor of Boursin Cheese. Shallot and Chive, Basil and Chive all sound delicious in this recipe. If you cannot find Boursin Cheese, another great alternative will be Alouette cheese, garlic, and herb cheese.

    Make them in advance: You can prepare the mashed potatoes in advance, place them in a baking dish, cover them, and place it in the fridge. Whenever you are ready to bake them, you can top it with cheese. (Bake them for 20 minutes if they have been stored in the fridge.)

    Steps to make Mashed Potatoes with Boursin Cheese

    1. Start by peeling the potatoes, wash them, and cut them into small pieces. Add them to a large pot and fill the pot with hot water, covering them by a couple of inches. Bring the pot to a boil on medium heat until they are fork-tender, 15 minutes. Once they are ready, strain the potatoes and return them to the pot.
    2. Mash potatoes with a fork or potato masher.
    3. Add cream cheese, butter, salt, black pepper, onion, garlic powder, Boursin cheese, and milk and mix them on medium heat until they are all combined.
    4. Transfer mashed potatoes to a baking dish (I used an 8x8 baking dish) and top it with your favorite cheese.
    5. Lastly, bake on a preheated oven (350 degrees F - 177 degrees C) for 10 minutes and broil on high until golden on top.
    6. Sprinkle fresh herbs on the top of dish before serving.
