First, preheat the oven to 410 degrees F and line muffin tins with liners.
Next, in a large bowl, whisk pumpkin, egg, pumpkin pie spice, and cinnamon until fully combined. Add cake mix and fold until everything is combined. Using a cookie scope, fill the muffin liners placed in the muffin pan.
Then, make the cheesecake filling: in a separate bowl, combine cream cheese, sugar, and vanilla until well combined and smooth.
Now, add a tablespoon of the cream cheese mixture to the center of each muffin.
After that, bake for 10 minutes at 410 degrees F. Lower the oven temperature to 350 degrees F and bake for 20 minutes, or until a toothpick inserted comes out clean.
Finally, place the muffins on a wire rack to cool completely.
