Love this recipe! So far, I’ve made it three times. It’s in heavy rotation at our house. The first time I made it , I followed your recipe as written. When I added the three eggs, I was worried that the mixture was too loose. Nope! Turned out perfect. Crispy golden on the outside; moist on the inside. The second time I made it, I didn’t have fresh parsley, so I substituted green onions. It gave it an Asian flare. (Note to self: when going this direction, also add grated ginger.) The third time I made it, I didn’t have mozzarella, so I subbed Colby Jack and added grated jalapeño for the heck of it. My point is that your fritter recipe is awesome and versatile. If you mix up the seasonings, you won’t get tired of eating it as often as we do. Thanks!
