    There's no better meal than the delicious eggplant kabob. It's an eggplant stuffed with the best homemade kabob. I added the perfect seasoning and paired it up with specific ingredient and topped with red sauce! The Eggplant Kabob is baked in the oven until the sauce thickens. Everything is then cooked to perfection.


    Eggplants deserve a lot of appreciation! They're these round, juicy vegetables that contain all these beneficial nutrients. This purple vegetable may not be used in all your everyday meals, but it is definitely worth working it into your menu! Spongy on the inside and firm on the outside, this plant carries a bitter taste that is perfect for meat-based meals. However, different people call them different names.


    Eggplants or Aubergines?

    The British call them Aubergines, and Indians, in addition to various English speakers in Asia, call them Brinjauls or Brinjals.     I usually make this dish during the winter because it's best to serve when hot. The rice and the stuffed eggplants go perfectly together when the eggplant is oozing with the sauces of the kabob, and this can only be achieved when the eggplant has been cooked over high heat, eventually forcing the yummy kabob sauces to shoot out of the eggplants!

    Tips and Tricks for the Best Eggplant Kabob

    Cut these eggplants into very thin packets.

    Use preferred eggplants for eggplant kabob; Chinese eggplants, Globe Eggplants, and Italian Eggplants work wonders for this recipe.

    You can make some plain eggplants without the red sauce. Just bake them and then top them with a mixture of plain yogurt and garlic.

    Remove the seeds of your eggplants if you want to reduce the flavor of bitterness.

    Ingredients to Make the Eggplant Kabob and the Red Sauce

    • medium-sized eggplants
    • grated onions
    • cloves of garlic
    • finely chopped parsley
    • ground beef
    • pepper paste or tomato paste
    • smoked paprika
    • black pepper
    • Vegeta seasonings.
    • Salt to taste.

    Red sauce

    • hot water
    • tomato paste
    • Vegeta seasonings
    • black pepper
    • smoked paprika
    • Salt to taste

    Extras

    • Parsley to sprinkle on top
    • A drizzle of olive oil

    You can garnish your dish with the vegetable of your choice . I always add parsley because it intensifies the taste of the eggplants and creates this balance between all the ingredients.

    Don't putt off making this dish because the minute you take in the fragrant smell of the kabobs and the eggplants, you will know EXACTLY know what I'm talking about. Eggplants stuffed with juicy meat in the form of kabob will be your new favorite thing!

    The Eggplant Kabob is so tender and aromatic ! The eggplants are so soft on the inside and flavorful!
    This dish is so good!

    How to Make this Flavorful Meal

    The first step: Wash eggplants and cut their stems and ends off.

    The second step: Cut the eggplants lengthwise (in the middle).

    Third and final step: Place two objects (like a butter knife )on each side of eggplants and then proceed to cut them into very thin packets. (Watch the video of how I cut them).

    Step 4: Place eggplants in water and add some salt to them to reduce the bitterness. 


    The Kabob

    In a bowl, grate onion and garlic. Then add finely chopped parsley. Add ground beef, pepper paste, black peppers, smoked paprika, and Vegeta seasonings. Mix well until all are combined.

    The Red Sauce

    Add hot water to a bowl, then add tomato paste, smoked paprika, black pepper, and Vegeta seasonings. Use a whisk to make sure all ingredients are mixed well. 


    Finally, Stuff the Eggplants

    Fill the eggplants with the kofta/ kabob and then place them in a baking dish. Add red sauce and drizzle some olive oil.

    Bake in your preheated oven at (400 degrees F -200 degrees C) for 30 minutes. Enjoy it with vermicelli rice.

    Ingredients
      

    • 6 medium eggplants
    • 2 tablespoon grated onions
    • 3 cloves of grated garlic
    • ¼ cup finely chopped paresely
    • 300 grams ground beef
    • 2 tablespoon mild pepper paste or tomato paste
    • 1 teaspoon smoked paprika
    • ½ teaspoon black pepper
    • 1 teaspoon vegeta seasoning
    • salt to taste

    Red Sauce

    • 2 cups hot water
    • ¼ cup tomato paste
    • 1 teapoon vegeta seasoning
    • ½ teaspoon black pepper
    • 1 teaspoon smoked paprika
    • salt to taste

    Extras

    • a drizzle of olive oil
    • Parsley to sprinkle on top before serving

    Instructions
     

    Get the eggplants ready;

    • -Rinse eggplants and cut the stems and ends off .
    • Slice the eggplants lengthwise (in the middle ).
    • Place two objects( like a butter knife) on each side of eggplants and then proceed to cut them into very thin packets.
    • Place eggplants in water and add some salt to it in order to remove the bitterness from the eggplants. 

    Directions to make kofta kebab:

    • In a bowl, grate onion and garlic .Add finely chopped parsley, ground beef, pepper paste, black peppers, smoked paprika, and Vegeta seasonings. Mix well until all combined.

    Directions to make the red sauce:

    • Add hot water , tomato paste, smoked paprika, black pepper, and Vegeta seasonings to a bowl. Use a whisk to make sure all is combined. 

    Fill the eggplants:

    • Fill the eggplants with the kofta kabob .Then place them in a baking dish. Add red sauce and drizzle some olive oil.
    • Bake in your preheated oven at (400 degrees F -200 degrees C) for 30 minutes. Sprinkle some chopped parsley on top and enjoy it with vermicelli rice.
