Huy Fong founded Sriracha in Irwindale, California in 1980. To meet the ever-increasing demand for the sauce, 100 million pounds of chilies are required each year! Fresh red jalapenos, to be exact.

These pungent chilies caused local residents to complain of “burning eyes, irritated throats, and headaches” in 2013, putting Huy Fong in the spotlight for reasons other than its delicious sauce. Other companies such as Tabasco, Frank’s Red Hot, and Heinz, produce their own version now.
