Kunafa is a stringy pastry soaked in sugar syrup and filled with cream cheese. It is a traditional Middle Eastern and Arab dessert dish that is centuries old. Although the real origin of Kunafa is debatable, it is said that it has appeared in the 10th century. However, it did not get the name we know today until the 13th century. The story says that the Kunafa recipe was created especially for the royalty of that era to satisfy their hunger during the month of Ramadan. However, people debate that the recipe originated from either Egypt or Syria. Whatever the region be, today, Kunafa is a famous dessert of the Arab world. In fact, it is widely known all over the world as among the most flavorsome desserts you can eat.
A traditional Kunafa is in made in pizza-form, filled with cream, chopped pistachios, and topped with sugar syrup. However, my version of Kunafa is a bit different; I make Kunafa Rolls that are filled with cream. These are not just a feast for the eyes but are also super easy to eat.

- Kunafa pastry: You can get this pastry from any Middle Eastern grocery store. Make sure that it is fresh. It will not be like a traditional pastry. It is in the form of threads or stands. Sometimes known as osmaliyi or kataifi dough.
- Cream: The next main ingredient is the cream for the filling. You can prepare your cream filling or Ashta. You can also use Ricotta Cheese as a substitute; it works perfectly fine as well.
- Simple Syrup: The last main ingredient that gives sweetness to this dish is the sugar syrup. Making sugar syrup is super easy. You need to cook sugar in water with a bit of lemon juice. Once it gets thick, remove, and let it cool down. Make sure you do not pour hot syrup on the Kunafa Rolls. Syrup at room temperature will do perfectly well.
- Garnish or topping: Traditionally, every Kunafa recipe involves pistachios. You can use chopped or crushed pistachios according to your liking. However, you can also use other chopped nuts. It is entirely up to you and your taste preferences.

- fresh lemon juice

How to Make Simple Syrup
- Pour water in a saucepan. Add sugar and fresh lemon juice and mix well.
- Place the saucepan over medium heat and bring it to a boil. Stir at regular intervals.
- As the mixture starts to boil, reduce the heat and let it simmer for 10 minutes.
- Once the syrup starts to thicken up, remove it from heat. Add orange blossom water and mix well.
- Pour it in a liquid jug and let it come to room temperature.
How to Make Kunafa Rolls
- In a bowl, add eggs, vanilla extract, and apple cider vinegar and beat well.
- Roll aluminum foil and form a cylindrical shape.
- Spread the Kunafa dough on a workstation and place the cylinder foil on top. Roll the dough in such a way that it covers the cylinder. Brush the egg mixture on the Kunafa dough and use your hands to seal it in place by applying slight pressure on it.
- In a frying pan, add butter and oil.
- Once heated, place the Kunafa Rolls and fry on each side until they get a golden brown color.
- Remove from the pan and let them cool a bit.
How to Make Ashta Cream
- Heat butter in a saucepan. Add flour and semolina and cook for a minute until you start smelling its fragrance. Remove the pan from heat and add heavy cream and sugar. While stirring, place the pan back on medium heat and bring it to a boil.
- As the mixture starts thickening up, add milk mixed with cornstarch and mix them well. Let it simmer for a few minutes.
- Once the mixture thickens up, remove it from the heat. Add rosewater and mix. As the mixture cools down, it will be thick as a cream. Add it into a piping bag and save it for later use.
Assemble Kunafa Rolls
- As the rolls cool down, remove them from the aluminum foil. At this point, they will hold a shape of a hollow cylinder.
- Pipe cream in the hollow Kunafa Rolls.
- In a bowl, add chopped pistachios and dip the two sides of the Kunafa Rolls in it. Place the rolls in a dish.
- Pour the prepared sugar syrup on top and serve.
