The Cheesecake Factory is well-known for its extensive menu selections and unique pasta dishes! Davinci Pasta is one of their most popular pasta dishes, and one of my favorite!
There is so much to love about this dish, but one of the best things about it is how simple it is to make at home. In just 45 minutes, you can prepare a restaurant-quality meal at home.
A great pasta dish, in my opinion, is one that has a good balance of pasta, meat or seafood, vegetables, and a creamy sauce! Pasta Da Vinci checks every box and is simply irresistible.

What Is Pasta Da Vinci?
Penne pasta with a creamy Madeira sauce is one of the most popular Cheesecake Factory recipes. The dish includes sautéed mushrooms, red onions, garlic cloves, Madeira wine sauce, and chicken. However, I didn’t use any wine in the sauce, Feel free to use it or substitute it with chicken stock.
Because of a unique secret ingredient – sour cream- the sauce has a slightly tangy flavor. Heavy cream, white grape juice, and a sprinkle of parmesan cheese round out the flavorful sauce.

You’ll only need a handful of ingredients to prepare this delicious pasta dish:
Shiitake mushrooms: These mushrooms are the star of this pasta dish. If you can find them, I highly recommend using them. They are widely available in supermarkets and have a very umami, delicious flavor. If you can’t find shiitakes, try cremini, button mushrooms, or white mushrooms instead.
Chicken: I enjoy pasta dishes with chicken because it provides a well-rounded meal. You will need boneless skinless chicken breasts. You can also use chicken tenders.
Olive oil: I recommend using olive oil to cook the chicken.
Butter: You need some butter to saute onions and mushrooms.
Red onion: Red onions are delicious in pasta because they add color and flavor.
Penne pasta: You can use any pasta you want, but the Cheesecake Factory uses penne pasta in this dish.
Heavy Cream: Cream is a necessary ingredient in the sauce. It gives it a smooth, silky texture and a rich flavor.
Sour Cream: This unusual secret ingredient adds a tangy flavor to the sauce.
Garlic: Everything tastes better with garlic! You can add more or less garlic according to your personal preferences. A pinch of garlic powder also adds a kick to this pasta dish.

Steps to Prep Pasta Da Vinci Recipe
Cook the Pasta
First, add the uncooked penne pasta to a boiling pan and according to package directions, and reserve 1/2 cup of pasta water.
Cook the Chicken
Next, cut the chicken breast into bite-sized pieces and season with salt and black pepper. Toss in flour.
Then, add oil to a large skillet on medium-high heat, and add the chicken cubes. Cook for about 4-5 minutes on each side. Toss until nearly cooked through. Remove the chicken and set it aside.

Now, add two tablespoons butter to the same skillet and cook the onion for 5 minutes on medium heat. Add garlic and mushroom and sauté for 2 more minutes until soft and brown.
After that, add grape juice, pasta water, heavy cream, cooked chicken cubes, and sour cream. Bring to gentle simmer (around 4 minutes). Add more salt and black pepper if needed.
Finally, toss the pasta a little bit and mix to combine. Serve immediately.

- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ cup flour
- 2 tablespoons olive oil
The Sauce
- 2 tablespoons unsalted butter
- ½ cup red onion diced
- 6 cloves garlic diced
- 1 pound shiitake mushrooms sliced or button mushrooms
- 1 cup heavy cream
- ½ cup sour cream
- ½ cup white grape juice Grape juice is used in place of Marsala wine. You can use 1/2 cup chicken stock instead.
Optional:
- 1/2 cup parmesan cheese sprinkle on the pasta before serving
